MARINATED MACKEREL WITH CHICKPEA SALAD

INGREDIENTS:

1 marinated mackerel fillet, cut into 3-4 pieces

For the chickpea salad:

120 g. of chickpeas, boiled and drained
1 medium tomato (separate the skin from the seeds)
1 passion fruit
¼ of lemon, juice, and zest
50 g. of chopped parsley
50 g. of chopped coriander
20 sprigs of chives, chopped
8 tbsp. of olive oil
Salt and pepper

INSTRUCTIONS

Place 40 g of the boiled chickpeas, 4 tbsp. of olive oil, lemon juice in the blender, and puree until you have a thick cream.
Pour the remaining chickpeas with the cream, 2 tbsp. of olive oil, add the diced tomato skin, parsley, coriander, chives, salt, and pepper, and mix the salad mixture well.
Pour the juice and seeds from the passion fruit into a bowl and add the tomato seeds and the last 2 tbsp. of olive oil and mix all the ingredients.

Serve the salad mixture in a circle on the plate, creating a “wreath.” Inside the “wreath,” add the passion fruit sauce and the mackerel fillets.

TIP: Serve with beetroot crackers.
