Summer salad with Trikalinos Bottarga Breeze
1 ½ cup of purslane
1 small cucumber, thinly sliced
1 radish, thinly sliced
1 slice of melon, thinly chopped
½ vanilla fruit, in small pieces
½ onion, thinly sliced
2 tablespoons of extra virgin olive oil
Juice and zest of half a lime
Freshly ground Trikalinos Bottarga Breeze (3-4 turns)
Put all the ingredients together in a bowl and season with freshly grated Bottarga Breeze. Mix and let marinate for 10 minutes.
Serve the ingredients on a plate flat-style and enjoy with slices of Trikalinos Golden Age Bottarga, for extra umami flavor.
